WINEMAKER’S NOTES:
A stunning, hand-crafted premier cru Vaillons from thirty-year-old vines. This is classic Chablis: precise, pure, and driven. Velvety citrus fruit gives way to textbook chalk, slate, and stone.
TASTING NOTES:
Kermit Lynch makes this wine with Gilles and Romain Collet of Domaine Jean Collet, the label designed after one used by the Collet’s great-grandfather, Henri Costal. The Collets farm their domaine under organics, collaborating on vinification and blending with Lynch for these wines. This one ferments in stainless steel with ambient yeasts, then ages in a mix of steel and neutral barrels (228 and 600 liters). The fruit has the pale yellow gold of fresh apples, clean and persistent, youthfully simple but precise. Scents of white rose show the elegance this will develop with age.
