WINEMAKER’S NOTES:
Pinot Grigio forms the base of this wine, balancing crisp green apple against the softness of lees aging in a 1200L Stück. Rounding things out, a small portion of skin fermented Grigio saignée was strategically blended in—building body and complexity on an otherwise uncomplicated grape. Bright Sauvignon Blanc shines through the most with juicy grapefruit and citrus, while herbaceous Grüner Veltliner provides supporting structure.
