WINEMAKER’S NOTES:
Patience was a requirement for the cool 2021 harvest with the Cabernet being picked 3 weeks later than average. The cool conditions create unique Cabernet Sauvignon with great acidity and freshness, not regular descriptions of Cabernet Sauvignon. Bright flavors and aromas of black cherry, black currant, tobacco, vanilla, and fresh herbs are beautifully woven throughout the wine. Rich yet light on its feet, the wine shows great balance and elegance and should drink well for the next decade or more.
TASTING NOTES:
The 2021 Cabernet Sauvignon (Santa Ynez Valley) is a classic Los Olivos wine endowed with tons of inky dark fruit and plenty of complicating earthy, savory undertones. Blue/purplish fruit, sage, lavender, licorice and chocolate are front and center in this potent Cabernet. Drinking window: 2024 — 2033.
